Brinjal Curry


Ingredients

2 Cup chopped Brinjal,

1/2 Cup Chopped onion,

1/2 Chopped Tomato,

1/4 Table Spoon Turmeric powder,

1 1/2 Table Spoon Chilly powder,

1/2 Table Spoon Coriander powder,

Salt for taste,

4 Table Spoon Oil ,

1 Table Spoon Ginger and Garlic Paste,

Method:

1.Heat oil in a pan. Fry onion and Ginger Garlic paste,then add chopped tomato.

2.Cook for 3 to 4 minutes in a medium flame,then add Brinjal,turmeric.

3.Add little water to the brinjal,then add salt for taste and mix well..

4.Cook for 10 to 12 mins on a medium heat.

5. Then Remove from flame.

6. Add 1 ttable Spon of coconut oil and curry leaves.

Now Brinjal Curry is ready.

Note:Adjust Ingredients according to taste.
