Palak Dal



INGREDIENTS:

1 Cup Toor dal or mung dal
Spinach / Palak
4 Green chillies
1 Onion
1 small tomato
Garam Masala or Sambar powder
Tamarind extarct
Turmeric
Mustard seeds
Jeera
Sugar
Salt
Oil

METHOD:

1. Cook spinach and Dal with pinch of turmeric powder.
2. Heat oil add mustard, cumin, green chillies, onion and tomato fry until tender.
3. Then add tamarind extract bring it to boil.
4. Add Sambar powder,salt and sugar mix, then add cooked spinach and dal , mix well.
5. Add 1 cup of water and let it cook for few minutes.
6. Serve hot with rice or chapathi.

Spinach Egg Omelette


Ingredients:

1 cup chopped spinach,

3 large eggs,

1/2 cup chopped onion,

1/2 cup chopped tomato,

salt for taste,

3 chopped Green Chilli,

Corainder Leaves,

Oil

Method:

1.Break eggs into a cup and Scramble eggs until well beaten.

2. Then add chopped onion,tomato,Spinach,Corinder leaves,Green Chilli and Salt,mix well.

3.Heat the oil in a non stick pan and Pour the beaten egg mixture and cook on both sides till light brown in colour.

Enjoy Spinach Egg Omelette with bread.

Note:Adjust ingredients according to taste,

Palak Paneer


Ingredients:

3 Cup finally chopped spinach,

1 cup paneer,

2 medium tomatoes,

1 Table Spoon chopped ginger,

1 Table Spoon coriander powder ,

1/2 Table Spoon turmeric powder,

1/2Table Spoon red chili powder,
1 Table Spoon oil,

1/2 Table Spoon cumin seed,

Pinch of asafetida (hing),

Salt to taste,

2 Table Spoon wheat flour,

1/3 cup heavy cream

Method:

1.Blend the tomatoes and ginger to make puree.
Mix corianderpowder , turmeric, and red chili powder with tomato puree and set aside.

2.Mix whole-wheat flour with heavy cream and set aside.

3.Cube the paneer in about half inch pieces and deep fry them on medium high heat just for few minutes so paneer become very light
gold in color,

(Note: Take paneer out on paper towel so extra oil can be absorbed)

4.Heat the oil in a pan. Then add hing and cumin seed. After cumin seeds crack, add the tomato puree mixture,
and let it cookfor a few minutes until the tomato puree is about half in volume.

5.Add the spinach, and let it cook on low medium heat for about 10 minutes covered.

6.Then add heavy cream mixture and let this cook another 4 to 5 minutes.

7.Add paneer and fold it gently with spinach and let it simmer for a 2-3 minutes.
Pan should remain covered until the cooking is finished, otherwise the spinach will splatter.

Note:Adjust Ingredients according to taste.

Aloo Palak

Ingredients:

2 Chopped Potatoes,
2 Cup Spinach(Palak),
2 Onion,
1 Tomato,
1/4 Table Spoon Salt,
1/4 Table Spoon Turmeric,
1/2 Table Spoon red chilli Powder,
1 Table Spoon Cumin Seeds,
4 Red Chilli,
1 Garlic,
2 Table Spoon Ghee,
2 Table Spoon Oil

Method:

1. Heat 2 Table Spoon oil in a Pan and add Red Chilli and 1/2 Garlic (paste),

2.Then add 1 Chopped Onion and Chopped potato,fry onions until golden brown in colour.

3.After 5 minutes,add Turmeric and Red chilli powder,mix well.

4.Then add Spinachand tomato,cook for about 12 to 15 minutes.

5.Heat the Ghee in a large saute pan or skillet.

6.Then add 1 onion,cumin seeds,remaining Garliceave it for about 4 to 5 minutes.Then add this to above mix.

Note:Adjust ingredients according to taste.

Palak Rice/ Spinach Rice



INGREDIENTS:

2 Cups Basmati rice
2 Potatoes chopped
1 cup peas
1 bunch Spinach/Palak
1 Tbl Spoon Garam Masala
2 to 3 Green Chillies
1 Onion chopped
Ginger garlic paste
Coriander/Cilantro
Mustard seeds
Lime
jeera
salt

METHOD:

1.Heat oil ,add mustard seeds,jeera, green chillies ,onion ,ginger garlic paste and fry
2.Then add peas ,potatoes, spinach and fry until tender
3.Add basmati rice sauté a while. Then add salt n garam masala mix well and leave it to cook.
4.Garnish with coriander leaves and lime juice.

We, Yashaswini and Jyothi who never entered kitchen and never knew how make a basic items to (not even coffee or Tea ;-)) before marraige now we are...well... say a good chef!!! We both were colleagues for one year at University of Mysore and our friendship still continues...even one is in US and other in Ireland.Far away...time difference...hmm..yet we both manage to chat and share recipes.
