Onion Pakoras


Ingredients:


4 to 5 Cups Gram flour/Besan

2 Onions Chopped lengthwise

3 to 4 Chillis

Ginger garlic paste

1 Table spoon jeera

1 Table spoon rawa/sooji

Coriander leaves

Dill leaves

oil

salt



Method:


1. Mix all the above ingredients (do not add water) and leave it for 20 minutes.
2. Add a table spoon of oil and a few drops of water if the moister left from onion is not enough.
3. Knead into dough(very thick batter) , scoop out and deep fry.
4. Drain out when it turns into dark brown in colour and serve with green chutney and sauce.

Rava Idli


Ingredients

1 cup sooji/rava (Idli Rava)
1/2 Tablespoon mustard seeds
3 chopped green chilies
1 Tablespoon  chana daal
1/4 Tablespoon  Baking soda
cashews
coriander leaves
1 cup yogurt(Curd)
1 Tablespoon  oil
Salt for taste
Carrot

Method

1. Heat oil and add mustard seeds,Coriander leaves. When they start popping ,add chopped green chilies, chana daal and fry for sometime. 
Switch off the heat andadd Rava, and mix well.

2. Add salt,  Baking soda, cashew, yogurt/curd and mix well. Leave it for around 15 to 20 minutes.

Grease an idli stand. Keep chopped carrot (Round shaped) and then put the mixture on top ,so that when the idlis are removed, the carrot can be seen on the top. Steam for around 15 to 20 minutes.

Serve hot.

Adjust Ingredients according to taste.

Egg chat/Deviled Eggs






Ingredients:

Boiled eggs

1 Onion

1 Tomato

Coriander leaves

Chat masala powder

Chilli powder

Pepper powder

Salt


Method:

1. Cut the eggs into half lenght wise

2.Take out the yolks and smash it in a separate bowl

3. Add finely Chopped onion and tomato, pepper, chat masala and salt into the smashed yolk and mix well. Taste and re-season if neccesary

4. Spoon the above mixture into the egg halves

5.Sprinkle chilli powder and lime juice. Spread corinder leaves and serve

Bread Tikka/Veg Bread Bhaji


Ingredients:

3 to 4 Bread slices

1 Cup chopped Cabbage

1 Cup grated Carrot

1 Tbl. spoon Ginger garlic paste(optional)

Green chilli

1 Tbl. Spoon jeera

salt

Chat masala

Corinader leaves

Lime

Finely chopped onion


Method:


1. Dip bread slices in water and squeeze out the water in it and put in bowl


2. Add chopped cabbage , chilli, grated carrot, jeera, ginger garlic paste, salt and mix well


3. If the above mixture turns out to be very smooth then add dry bread slice in it and mix well so that it can be shaped into small tikkas


4. Deep fry those tikkas


5. Top it with finely chopped onion, chat masala powder, coriander leaves and lime


6. Serve Hot with Tomato sauce.

Shavige Upma

Ingredients

Rice Shavige(Vermicelli)
Note:Vermicelli  is readily available in the market 
2 Tablespoon of Oil
10-12 of curry leaves
1 Cup of Onion(Chopped lengthwise)
5 Green chillies
1 Tablespoon of black gram (urad dal)
1 Tablespoon of cashew
3 Tablespoon of  of lemon juice
1 Cup of Coriander leaves
 peanuts
 grated fresh coconut (optional)
Mustard Seeds
Salt for taste
Turmeric

Method

1.Cook Shavige in plenty of boiling water for about 5 to 8 minutes,Then remove water from shavige,add some cold water to shavige,
leave 5 minutes,Agian remove water from shavige,drain and keep aside.

2.Heat Oil in a shallow pan,Add mustard seeds,curry leaves,urad dal,peanuts,cashew,chopped onion,green chilli,turmeric and fry up until they turn translucent.

3.Add Shavige, salt and mix well.

4.Switch off the stove; Add lemon juice and Grated cocnout.Garnish with chopped Coriander leaves and serve.

Adjust ingredients according to taste; 


Aalu Dahi Pappadi Chat



Ingredients:
3 to 4 potatoes cooked and smashed
1 cup finely chopped onion
1 cup finely chopped tomato
Half cup peas processed or cooked
Chilli powder
Chat masala powder
Roasted peanuts
Sev
yogurt
Tomato sauce
Sweet chutney
Coriander leaves
puris
Lemon juice
Salt


Method:

1. keep the puris on the plate ,stuff them with potatoes smashed along with peas,finely chopped onion , tomato roasted peanuts (say 2 -3 peanuts).

2. Add yogurt and very little quantity of tomato sauce and sweet chutney.

3. Sprinkle chat masala,chilli powder,salt and lemon on it

4. Add sev and coriander leaves and chat is ready to it!.


Vegetable Sambar


Ingredients:
1 carrot chopped
4 to 5 Beans chopped
2 to 3 potatoes Chopped
Half Brinjal chopped
1 cup sprouted green gram(or any gram of ur wish)
1 cup Tamarind extract
2 chillies chopped lenghtwise
1 Onion chopped Lenghtwise
Garam masala or sambar powder
Chilli powder
Half table spoon sugar
Mustard seeds
Jeera
Fenugreek leaves
Coriander leaves
Ginger garlic paste(optional)
Water to cook vegetables
Salt

Method:

1. Add all the chopped vegetables along with water,spourted green gram,tamarind extract,chopped chillies and onion,chilly powder,sambar powder,salt,sugar into the cooker and cook them.
2.In a pan heat oil add mustard seeds ,jeera,fenugreek leaves,ginger garlic paste and fry until the raw smell goes off.
3. Add the above into the cooked vegetables and mix
4. Top it with coriander leaves and serve.

Goes well with chapati and rice.

VEG BURGER




Ingredients:
3 to 4 Potatoes(cooked and smashed)
2 grated carrots
1 Onion sliced
1 Tomato sliced
1 capsicum sliced
cucumber sliced
Half cup peas (processed or cooked)
Ginger Garlic paste
chilli powder
cheese
Coriander leaves.
Rice flour
Rawa or bread crumbs
Tomato sauce
Burger Buns
Bread slices (if required)
salt
Method:
1. Mix Smashed potatoes,chilli powder,salt,coriander leaves,peas,grated carrot,ginger garlic paste.If the dough is very soft that you cannot make it into a cutlet shape then add bread slice and mix.
2. Dip the cutlets into Rice batter( rice flour+water) and roll over bread crumbs or rawa and then deep fry (Or you can fry on tava with little oil).Keep aside
3. Take burger buns, add slices onion,tomato,cucumber,cheese slice,the above made cutlet,tomato sauce in between the buns.
4. Micro wave the burger say for a minute(cheese starts melting) and serve hot along with coke and finger chips!..hmmmm...yummy!

We, Yashaswini and Jyothi who never entered kitchen and never knew how make a basic items to (not even coffee or Tea ;-)) before marraige now we are...well... say a good chef!!! We both were colleagues for one year at University of Mysore and our friendship still continues...even one is in US and other in Ireland.Far away...time difference...hmm..yet we both manage to chat and share recipes.
